A young Justin Cufone would not recognise the impact that several family trips to Italy would have on his culinary future. In 2008, down a narrow-cobbled lane, he was handed a slice of pizza that blew his tomatoes off the vine…A memorable slice of Neapolitan pizza, a contemporary classic that played host to only a few ingredients. Years later, he returned to the village where his grandparents were born and was inspired by the culinary principles of the region. He learnt that pizzas should be ‘simplistically beautiful’. He returned to Australia, determined to do his part to preserve and showcase the traditional Italian way. Much like the partnership between the basil and tomato, Justin found a similarly beautiful union when he married an Australian-born Syrian girl. Justin’s taste buds were soon introduced to pizzas’ exotic, middle-eastern cousin, the Manooshi. Fascinated with this culinary marvel, which was often enjoyed at the opposite time of day than the traditional Neapolitan Pizza, Justin thought it only appropriate that they should present their skills in showcasing recipes and flavours from the East too. So, Cucina Cufone was born…This little kitchen pays homage to its origins. Bringing to life traditional recipes, using the highest quality of ingredients, served with a modern, lively flavour.
